Cabbage, White Bean, Ginger Sage Sausage Soup

Cook and crumble the sausage in a large pot, over medium high heat. When the sausage has almost finished browning, add the onions and garlic. Cook for a few more minutes, until the sausage has browned and the onions are tender and garlic is browned. Add the cabbage, beans, tomatoes, broth, and spices. Stir to combine?and bring to a boil. Once boiling reduce to a simmer and cook for about 45 minutes to soften the cabbage.


  • 1 pound hot or mild Veggie Wagon Ginger Sage ground sausage
  • 1 small white or yellow onion, diced
  • 1 small organic green cabbage, sliced into bite size pieces, about 4 cups worth
  • 1 14 ounce can of diced tomatoes
  • 15 oz of cooked or canned northern beans
  • 6 cups chicken or veggie broth
  • 2-3 cloves of finely chopped garlic
  • 1/2 teaspoon oregano
  • 1/2 teaspoon basil
  • 1/4 teaspoon thyme
